Hayakawa makes a variety of fermented foods using koji and was founded in 1885.

To make yuzu miso, organic barley miso is blended with the organic yuzu. Bright with both sweet and tangy notes, the smooth paste is dark in color and light in flavor.

Use as a base for miso soup, but also as a sauce or dip with meat or vegetables. It is particularly good with grilled salmon or chicken.
